Please check whether you have enabled DYNAMIC INSERTION for your flexfield which you are using for the ledger creation.
After enabling Dynamic insertion, you logout of the instance and login again , so that the changes can take in to effect !

From exam point of view, i would suggest you to study the oracle university material and practice the hands on exercises provided, that will be more than enough to clear the exam !

Either u create one with the specification u wanted or use the default profile class.....Default profile class will pop up when u go to that particular tab in the customer site level... !
