There is no supported way to change the Set of Books name.

Changing the set of books name by using SQL is not supported by Oracle
Support.

The only option would be to create a new set of books.
When you create a new set of books you also have to do the following:
1) Run consolidations in GL to transfer balances.
2) Repoint all the subledgers to the new set of books

You can't change the name of SOB bt Short Name can be changed.
