Hi,
There are different fulfillment methods of sales orders.

1.ship from stock
2.assemble to order
3.make to order
4.back to back orders
5.drop shipment

1.--> if u have item in stock in inventory
2.--> Assemble items like systems, laptops which are configured and involves work order jobs
3.-->items like rockets which are costly and 1 time manufacture goods where order is taken first and item is manufactured next
4. --> if item is not availiable with supplier .he procures the item from some other supplier and puts the item in his inventory and later ships item to customer
5-->here seller books a SO and inturn he raises a PO to Supplier. The supplier ships the item to customer directly and sends an invoice to seller and sends a advanced shipment notification to seller indicating he had shipped goods to customer. The seller adds his brokerage charge and sends a invoice to cutomer.

All Inventory items are eligible for above sales order types.

Expense items are like services , guarantees which are not phsycally moved but they can be invoiced.

Assets can be immovable goods or asset to organization( which can be bought from other companies or can be internal transferred between different organizations such as systems etc)

There is no point in mapping items to differrent order types it does nt make sense.
