EBS 11.5.9 handing over checklist

Hi,
I am in the process of to take over EBS 11.5.9 on Win 2000 from another IT Company and also physically relocate it to different premises.
Any body guides me what things should be kept in mind during handing over or any system handing over check list is available because my organization wants that I have to document every step during this process.
Please help me what other things should I considered during EBS handing over from another company????
